Bigallet Lime Pulpé 1 L, No Added Sugar

Look at the bottle against the light and you will see pulp suspended in it. That is the whole difference. Bigallet’s Pulpés are built on real fruit rather than on flavoured sugar, and this one contains no added sugar at all: the softening comes from a small amount of stevia, a naturally sweet plant with no calories.

The colour is a pale champagne yellow, not a lurid green, because nothing has been coloured. The nose is zested lime rather than lime sweet.

In a hot country

The obvious use is hydration. Diluted heavily in cold water it makes a drink you can put away all afternoon without the sugar load of a cordial, which is a genuine consideration at thirty-four degrees.

The second use is behind a bar. A no-sugar lime concentrate is far more controllable in a cocktail than a sweetened one, because it lets the bartender decide how much sugar the drink carries rather than having it fixed for them. It is a good base for anything in the daiquiri, mojito or margarita family, and it makes a serious virgin mojito with mint and sparkling water.

In cooking

A spoonful lifts a ceviche, a papaya salad, a marinade, or a vinaigrette meant for grilled fish. Use it where you would use lime juice but want the acidity without the water.
