Bigallet Génépi Syrup 1 L

Génépi is a small alpine plant that grows above two thousand metres in the Alps, and the liqueur made from it is a mountain-village tradition that never travelled far. This syrup is that flavour without the alcohol: Bigallet infuses the flowers in house and sweetens with pure French sugar, nothing more.

It pours almost clear with a faint plant-green glint. The nose is fresh herbs with a lemony edge, and the palate is soft rather than medicinal, finishing on citrus. If you have only met génépi as a strong digestif after a ski holiday, this is a different and gentler proposition.

What to do with it

The house serve is a Virgin Mojito Alpin: génépi syrup, lime pulpé, sparkling water, fresh mint. It is the most interesting alcohol-free drink we know how to explain in one line, and it works particularly well in this climate because the herbal note reads as cooling.

It also goes into herbal teas and hot infusions, into gin drinks where it sits comfortably alongside juniper, and over a lemon sorbet.
