Our commitments

What we guarantee on every harvest

Three principles decide what we sell and what we refuse. They are not a charter written after the fact: they are the reasons the house exists.

Respect for people

We buy from family farms and cooperatives, and we commit over years rather than seasons, which is what allows a grower to plan. Stock is held for as short a time as possible so that what reaches you is close to its harvest. The farm we work with in Kampot keeps full autonomy: it commits to the specification, we check it, but we do not run its land.

Respect for the land

Organic growing, certified to both European and American standards, with no chemical fertiliser and no synthetic insecticide. Harvest and sorting are done by hand, berry by berry for the red pepper. Our packaging is recyclable, and we offer refills for our mills, so you can refill rather than rebuy.

Pleasure, told plainly

Power and finesse are not opposites, and a spice that has been grown properly needs no help. We make our blends in our own workshop, we have certified whatever can be certified, and we tell you clearly what a product is and where it grew. The rest is your kitchen.
