Bigallet Dessertine Original Liqueur 70 cl

Dessertine is the bottle in the Bigallet range that resists a short description, which is the point of it. Two bouquets of aromatic plants, whose composition the house does not disclose, are distilled separately and then completed with in-house infusions. The liqueur is then left in oak barrels for several months, and how many is the cellar master’s call rather than a fixed rule.

What comes out is golden, floral on the nose in a way that is closer to a perfume than to a spirit, and unusually rich on the palate: fresh plants first, then honeyed notes underneath, then the length that the barrel gave it. 43% vol.

Neat, or in a glass with ice

It works as a digestif at room temperature in a small glass, where the aromatics open as it warms in the hand. Over a single large ice cube it becomes a different and more approachable drink, less concentrated and easier at the end of a hot evening.

Behind a bar it is a base rather than a modifier. The house serve is a Dessertine Mule: Dessertine, lime pulpé, ginger beer, ice. The ginger meets the plants head on and the result is far more interesting than a vodka version of the same drink.
