The story

Organic chai black tea

Chai is not a flavour of tea, it is a method. In India a chai is boiled rather than steeped, with milk, sugar and whole spices, until the whole thing is one drink instead of tea with things added. Our blend is built for that treatment: a robust Sri Lankan black tea base carrying the warm spices, cut coarse enough to survive being simmered.

Brewed like an ordinary tea it is pleasant. Brewed the way it is meant to be, it is something else.

The proper method

Bring water and the leaf to a simmer for three to four minutes, add milk, bring it back to a simmer, then strain. Sugar goes in during the boil, not after, which changes how it tastes. Use more leaf than you would for a plain tea: the milk absorbs a lot.

The quick version, 90 °C for three to four minutes in a pot with a splash of hot milk at the end, is perfectly good on a weekday morning.

The Cambodian version

In this heat, iced is often better. Brew it very strong, sweeten with condensed milk while hot, cool it, and pour over a tall glass of ice. This is essentially how tea is served at every roadside stall in the country, and this blend takes to it well because the spice survives the dilution.

Available in tins and bags in Siem Reap, Phnom Penh and Kampot.

What our customers say

  • I came in for one tube of black pepper and left with the three colour set. The staff opened each one so I could smell them before choosing. Nothing was rushed.

Questions

How do I make a proper chai rather than tea with spices in it?

Boil it, do not steep it. Bring water and the leaf to a simmer for three to four minutes, add milk, bring it back to a simmer, then strain. Sugar goes in during the boil, not after, which genuinely changes the taste. Use more leaf than for a plain tea, because the milk absorbs a great deal.

Can I make the iced version sold on the roadside here?

Yes, and this blend is built for it. Brew very strong, sweeten with condensed milk while it is still hot, cool it, then pour over a tall glass of ice. That is essentially how tea is served at roadside stalls across the country. The spice survives the dilution, which is why a plain black tea does not work as well.

Where can I buy it in Phnom Penh?

In our Phnom Penh shop, in the 90 g metal tin and in kraft bags for a café or a household that drinks it daily. If you want case quantities for a business, ask through our professional page rather than emptying the shelf.
