The story
Organic sencha green tea
Sencha is the green tea most people picture when they picture green tea: flat needle leaves, a bright yellow-green liquor, and a taste that sits somewhere between fresh grass, cooked spinach and sea air. Ours is grown organically in China in the sencha style, which is to say the leaf is steamed rather than pan-fired shortly after picking. That steaming is what fixes the colour and keeps the vegetal character intact.
Water temperature does most of the work
This is the tea that punishes boiling water. At 100 °C the leaf releases its tannins immediately and the cup turns bitter and drying, which is why so many people decide they do not like green tea. At 90 °C for two to three minutes it is sweet, round and slightly savoury.
If you have no thermometer, boil the kettle and wait two minutes with the lid off, or pour the water into a second vessel before it hits the leaf. Both drop the temperature far enough.
Second and third infusions
Do not throw the leaf away after one cup. A sencha gives a good second infusion, shorter than the first, and a lighter third. The second is often the best of the three: the sharp edges are gone and the sweetness is still there.
Drink it plain, in the morning or in the afternoon, and away from strong food. It is on the shelves in all three of our shops, in tins, in kraft bags and in boxes of 80 tea bags.
What our customers say
I came in for one tube of black pepper and left with the three colour set. The staff opened each one so I could smell them before choosing. Nothing was rushed.

Questions
Why does my green tea taste bitter?
Almost always the water. At 100 °C the leaf releases its tannins immediately and the cup turns drying and harsh, which is the reason many people decide they dislike green tea. At 90 °C for two to three minutes the same leaf is sweet and slightly savoury. Without a thermometer, boil the kettle and wait two minutes with the lid off.
How many times can I reinfuse it?
Two or three. Do not throw the leaf away after one cup. The second infusion is shorter than the first and is often the best of the three: the sharp edges are gone and the sweetness is still there. The third is lighter and still worth drinking.
Metal tin or kraft bag?
The tin if the tea travels or if you drink it slowly, because it blocks air, light and smell at once. The kraft bag if you get through a lot at home and will finish it within a few months. The tea is identical, only the protection differs.
