The story

Organic black and red Kampot pepper PGI, 120 g tube

Black and red are the two Kampot peppers a kitchen actually runs on. The black is the everyday one, picked green and sun dried, direct and hot. The red is left to ripen fully on the vine, sweeter, fruitier, and far rarer because a vine gives only a fraction of it.

This tube holds both, half and half, which is the mix many of our customers ended up making themselves after buying the two separately. Ground together they cover almost everything: the black carries the heat, the red rounds it and adds the fruit behind.

How to use it

Grind it at the last moment, over red meat, into a sauce off the heat, or on a dessert where the red pepper does something a black pepper alone cannot. It is not a finishing pepper in the way whole red is: it is an everyday blend meant for the mill.

Both peppers carry the Kampot protected geographical indication, registered in Cambodia in 2010 and recognised by the European Union in 2016, and both are certified organic.

What our customers say

  • I came in for one tube of black pepper and left with the three colour set. The staff opened each one so I could smell them before choosing. Nothing was rushed.

Questions

What is the ratio between the two peppers?

Half and half. It is the proportion our own customers arrived at when they bought the two separately and mixed them, so we packed it that way. The black carries the heat, the red brings the fruit and rounds the edge.

Should I use it whole or ground?

Ground, and at the last moment. This is an everyday blend built for the mill, not a finishing pepper. If you want whole red pepper to crush over a dish at the end, buy the red on its own, it is a different use.

Where can I buy it in Cambodia?

In our three shops, in Siem Reap, Phnom Penh and Kampot. The 120 g tube stands up in a bag and stacks in a cupboard afterwards, which makes it one of the easier formats to travel with.
