The story

Bigallet Green Mint Syrup 1 L

Mint syrup is one of the few French café habits that transferred intact to Cambodia. It is on the shelf behind every counter that serves a diabolo, it goes into iced tea, and it is the base of a mojito whether or not there is rum in the glass. The problem is that most of what is sold here is colouring and sugar with a mint note somewhere behind it.

This one is made by Bigallet, a family distillery founded in 1872 at the foot of the Alps, from organic mint extract and pure French beet sugar, with no preservatives. The colour is emerald, the nose is peppermint, and the mint on the palate is intense rather than sweet, finishing fresh instead of sticky.

Where it earns its place

In lemonade and sparkling water, where a weak syrup disappears the moment ice is added. In cocktails and mocktails, especially anything built on lime. Over ice cream, fruit salad or a chocolate dessert. And in iced green tea, which is a better combination than it sounds.

Because the mint is concentrated, use less than you would with a supermarket syrup. Start at half.

What our customers say

  • I came in for one tube of black pepper and left with the three colour set. The staff opened each one so I could smell them before choosing. Nothing was rushed.

Questions

How much syrup for a diabolo or a lemonade?

Start at half what you are used to. This is an infusion of organic mint with pure French sugar rather than colouring with a mint note, so the mint is concentrated and a standard dose tastes heavy. Roughly one part syrup to eight parts sparkling water, then adjust upwards if you want it sweeter.

Do you sell to bars, hotels and cafés?

Yes, and the one litre bottle is the professional format for exactly that reason. Case pricing and delivery for businesses in Siem Reap, Phnom Penh and Kampot go through our professional page. It is also the format that makes sense for a household that gets through a lot in the hot season.

What else can I do with it beyond drinks?

Over ice cream, a fruit salad or a chocolate dessert. In iced green tea, which is a better pairing than it sounds. And in any cocktail built on lime, where a weak syrup disappears the moment the ice arrives and this one does not.
