The story

Kampot sea salt

Most of Cambodia’s salt comes from the flats you drive past between Kampot and Kep. Seawater is let in, moved from pan to pan as it concentrates, then left to the sun and raked into piles at the end of the dry season.

Nothing is refined, nothing is added, no anti caking agent. That is why the grain is not perfectly even, the colour is not laboratory white, and the salt draws moisture if you leave it open. All three are signs of what it is rather than defects.

The grinder

It arrives filled and ready, and it opens for refilling: unscrew the top and the body takes a new charge. Nothing is glued, and the mechanism lasts for years.

This is the everyday salt, the one for the pot and the board. For finishing a dish at the last second, the fleur de sel is the one you want, it is a different product taken from the surface of the same pans.

What our customers say

  • I came in for one tube of black pepper and left with the three colour set. The staff opened each one so I could smell them before choosing. Nothing was rushed.

Questions

Is this salt iodised or refined?

Neither. It is seawater, sun, wind and time. No refining, no anti caking agent, no additive of any kind. If you need iodised salt for medical reasons, this is not it.

Is the grinder refillable?

Yes. Unscrew the top and the body opens for a new charge. Nothing is glued or sealed.

What is the difference with the fleur de sel?

Where it is taken from. This is the coarse salt that crystallises in the body of the pan, the everyday one. Fleur de sel is the thin crust lifted by hand from the surface on the calmest mornings, and it belongs on a finished dish rather than in the pot.
